Viticulture & Vinification
Vinification using the “blanc de noirs” method. This wine is a stylistic exercise involving the production of white wine from black grapes typically used for red wine. It is made from the Merlot grape, vinified at low temperatures and without maceration to extract the aromas but not the color.
Serving & Aging
Serve chilled between 8 and 12°C.
Best enjoyed within 1 to 2 years of the harvest year.Tasting Notes
Pale yellow with pearlescent highlights, this wine offers intense fruity aromas (banana, pear), with a supple palate and a lovely smoothness punctuated by superb freshness, revealing an aromatic explosion. A wine with a distinct personality, best served with a citrus-infused scallop carpaccio or a strawberry-basil sabayon.
